Hot 'n' Saucy

 Please join us for Chef Dany's THIRD return to the foothills.  His first and only two Paladars and cooking class sold out faster than you could run for the milk after popping a jalapeño.   He is such a joy to have around and it is with extreme honor that he is returning with another special dinner.  If you don't already know the story of how we met, let me indulge you.
 I sat in a small bistro in Todos Santos, Mexico after a harsh winter.  As the meal progressed, I was brought to tears.  These tears were real and fully activated by the beautiful flavors enveloping my soul.  I was speechless... but not really, you know me.  I peered into the tiny kitchen and saw the man behind it all, but I was too overwhelmed and shy to approach him.  
 It wasn't until the next year on my return visit that I finally approached him about coming to California.  Actually, he approached me.  He was the only server and chef that day in his own tiny restaurant!  After a rowdy and hilarious all day cooking class and two trips up north to cook for us, I now call him a dear friend... an exceptionally talented dear friend.
 
 Dany LOVES peppers.  He has always wanted to showcase their deep and multilayered essences that go beyond basic heat.  He has varieties of peppers he is cultivating in New Mexico with friends and even adds them to his creme brûlée whenever possible.  This meal will showcase many kinds of nature's nightshade.  Please join us.

MENU
Passion fruit margarita, tequila, vanilla, jalapeno and agave syrup rimmed with spicy "Baja Sand"


Chilled avocado "cream" shot, "chile de arbol" infused olive oil.


Hemp seed crusted local sturgeon, fall vegetable brochette on rosemary skewer, caviar and chipotle-mezcal cream.


Chile "en nogado", stuffed roasted Poblano pepper with pork and beef, topped with walnut cream and pommegranate kernels.


Chocolate-Ancho chile creme brulee, anise-pistachio biscottis.
Lime-thyme sorbet.
