Il Buco's "Sagra del Maiale" Outdoor Pig Roast
On Sunday, September 21st, 2014 Il Buco Restaurant will celebrate its 20th anniversary by hosting a "Sagra del Maiale", an outdoor pig festival commemorating the autumn equinox.  This festival will take place outside Il Buco Restaurant from 1pm - 6pm, rain or shine!

Renowned Argentine chef Francis Mallman, an expert at cooking with fire, will join Il Buco's chef Joel Hough to roast 300 pound heritage pigs "infiernillo style". The roast will feature heritage pork from Flying Pigs Farm prepared three different ways: roast pork, porchetta panino and housemade pork apple and peperoncino sausage. The feast will also include pasta genovese, farmer's market panzanella salad and apple ricotta fritters with saba.

Tickets are $25 a plate or $32 with a glass of prosecco, lambrusco, wine or a seasonal beer.  We will also be offering a $12 childrens' plate that includes a beverage.

About Donna Lennard:
Founder and Owner
Donna worked in restaurants all over Manhattan during her film school years, including Chanterelle, Barolo and Arqua in Tribeca where she initially met Alberto, a "foodie" from birth.  In 1994 she and Alberto, created il Buco. At first Il Buco started out as a rustic antique store, then became a neighborhood hangout for locals and artists in the neighborhood for lunches.  As the clientele grew, they decided to obtain a liquor license and serve Spanish and Italian style tapas and a selection of artisan wines. The concept took off quickly since the ambience, a joint vision between Alberto's Italian roots and Donna's past life as an independent filmmaker, made people feel "at home".  It didn't take long before the store transformed into a full-blown Mediterranean restaurant in a gorgeous antique setting.

Donna has welcomed a number of incredibly talented chefs from varying backgrounds into her kitchen. Donna's underlying vision and philosophy is that the best food is comprised of high-quality ingredients, simply prepared. This philosophy have insured consistency over il Buco's twenty years.    

About Joel Hough:
Executive Chef Il Buco on Bond
Joel Hough began his career in the restaurant industry when he was 22 years old, working his way through the butchery, bakery and the hot line. He soon fell in love with bold flavors, acute technique and farm-to-table cooking. After moving to New York, he developed a penchant for simple, clean cooking. In 2004 Chef Jonathan Waxman tapped Joel to open Barbuto in the west village, elevating Joel's cooking and understanding of simple ingredients to the next level. In the fall of 2005, Joel opened Cookshop in Chelsea where he manned the kitchen until December of 2009.  Joel joined Il Buco in the summer of 2011 as the executive chef. He currently resides in Ft. Greene, Brooklyn with his wife and two daughters.  

About Francis Mallman:
Francis Mallmann was born in Buenos Aires and raised in the Patagonian Andes in a house where everything was sustained by ever-burning fires, the heating, the hot water, and the kitchen stove.  He started his first restaurant at 19 and followed it by training extensively in the greatest kitchens of France for many years. In a bold move, he left the fine-dining scene to return to his roots: fire.  In fact, his cooking methods all relate back to fire, ashes, charcoal and smoke.  As a TV star in South America, Mallmann is a showman who is passionate about cooking for a crowd, having had the pleasure of serving presidents, princes, and international celebrities.  He currently has restaurants in Argentina and Uruguay.
