Travel up to the Hudson Valley for a once in a lifetime experience in our local food system. We'll meet for a pig slaughter at a local farm to learn about humanely raised meats and ethical slaughter practices, as well as participate in discussions on sourcing, sustainability and labeling. The morning at the farm is a respectful and educational experience, one in which we show respect to the pig and give thanks for it providing us with nutritious meat. Then we'll mosey on over to our retail shop in Kingston, New York for a whole pig carving demonstration led by former CIA instructor and master butcher Hans Sebald. A bottomless resource of information, Hans will take you through every part of the pig from snout to tail, lessons on how to get the most value when shopping for pork, and of course tips for cooking it! To practices skills and knowledge you learned, we'll send you home with meat to cook and an experience to share with your friends and family.
Transportation and/or lodging are not included with this class. We will provide you with directions well in advance, as well as information on local hotels or restaurants should you be interested. This class will take place from approximately 9am-5pm on Sunday. If coming from NYC, you should plan to leave at 7:30am to arrive on the farm between 9-9:30am.
