The Whole Fish
Farmed Salmon? Genetically Engineered Salmon? Learn about the incredible wild salmon and its vital role in the ecosystems of the West Coast. We will talk about our local watershed and some of the challenges and progress we've made trying to protect our local salmon.
Along with this discussion, we'll demonstrate how to select and break down a whole salmon using every part of the fish. Learn how to make fish head soup, broil the collars, brine the eggs, bake the skins for "fish bacon" dry the bones and grind them into a "salt" or smoke them for stock. From "gill to adipose"- use the whole fish and enjoy tastes from our kitchen as we go through the afternoon.
About Maria: Maria Finn is the author of the multi-media TED Book "The Whole Fish: How Adventurous Eating Will Make You Healthier, Sexier and Help Save the Ocean" (2012). As well, she's author of the memoir "Hold Me Tight and Tango Me Home" (Algonquin 2010) that was optioned for a television series by Fox Studios and "A Little Piece of Earth, How to Grow Your Own Food in Small Spaces (Rizzoli, 2010). Her novel-in-progress "Sea Legs & Fish Nets" was a finalist for the Pen/Bellwether Prize in 2012.
