Sunday Share: Imperial Cuisine
This month's Sunday Share at Ecco takes us back in time as we celebrate Imperial Cuisine. Each of the five courses will feature a unique fusion of flavors from different countries that were once melded into large empires throughout history.
COURSE 1: La Cuisine Pied Noire-- refers to the black boots work by Europeans settling in Algeria during French and Spanish occupation
spiced lamb coca (puff pastry baked empanda)
preserved eggplant, black olive, currant coca
COURSE 2: Argentine Faina-- chickpea flour flat bread; influenced by southern Italian Pizza
chickpea flour flat bread, local goat cheese, braised artichoke, spicy Argentinean sausage
COURSE 3: French Indochina Banh Xeo
crispy rice flour crepe stuffed with slow roasted pork belly, bean sprouts, pickled ramps, toasted peanut and cilantro salsa verde
COURSE 4: Anglo-Indian Relations
whole roasted pork loin, Goan-style curry sauce, smashed spring peas and mint
COURSE 5: Cubbaita-- Featuring Sicily, the most conquered Island of all time
Sicilian Arab nougat, honey, almond, sesame
Join this family-style, communal dining adventure through time for only $40. Dinner begins at 6:30 on Sunday, June 8th.
