Mike Easton + Barrique Imports = Sabores De Nuevo México
Chef Mike Easton gets major national props for his wildly popular pasta shop Il Corvo (and his forthcoming Roman-style pizzeria Gabbiano), but did you know he grew up in New Mexico? It's the type of cuisine he loves to cook at home, and on Saturday, June 28, he'll be partnering with his friends from Barrique Imports to create a One Night Only, multi-course meal at the Mallet, Inc. kitchen studios perched above Esquin in SODO.
Currently, the menu looks like this, but is subject to change at Easton's whim:
Gruet Sparkling Wine e Bisquochitos New Mexico's own award winning sparkling wine with larded anise shortbread cookies
Calabazitas e Tamales de Molé de Pollo corn husk stuffed with masa chicken, chiles, spices and bittersweet coco, with a salsa of fresh green chile, summer squash, wild oregano and red onion
Ensalata de Jicama e Sandia watermelon, jicama root, a mint-lime vinaigrette
Carne Adobada e Sopapillas Chimayo red chile-braised pork shoulder, heirloom pinto beans, soft poached egg and handmade New Mexican fry-bread
Flan De Miel e Maiz sweet corn and wildflower honey flan
*All courses will be paired with wine from Barrique. And don't be surprised if some Tecate makes an appearance, too!
A cocktail reception featuring appetizers and bubbly will begin at 6:30 p.m. A seated dinner will follow around 7:00 p.m.
