A Globe of Small Bites
Spanish Tapas, Greek Mezes, Venetian Cicchetti, Latin American Pinchos, Chinese Dim Sum, and Caribbean Cutters, are examples of ways that people worldwide use innovative combinations of ingredients to create delicious small bites. The best way to enjoy small plates is with a group so you can share and try lots of dishes. This class will teach students to make a myriad of enticing appetizers for their next soiree. Emphasis will be put on making hors d'oeuvres that are fast, use minimal ingredients, and are easy to prepare.
We will compose cocktail snacks from Africa and the Middle East, Europe, Asia, and the Caribbean and Latin America. The menu will reflect what is best available and in season. Some of the tasty treats that may be crafted are Garlic Shrimp, Portabella Mushroom Pizzas, Ying and Yang salmon with passionfruit miso dip, Curry Crab on pappadams, Liberian pepper chicken wings, Lamb Kebabs Marrakech style, Jerk Tuna on Plantain Crisps, and Curry Beef with roti. Participants will also learn how to throw an impromptu cocktail gathering showcasing their new found culinary knowledge.
