The Farm Roast at Goose Island Beer Company
THE FARM ROAST 2-5 P.M. 605 N. SACRAMENTO. SPONSORED BY GOOSE ISLAND BEER COMPANY
The Farm Roast is Slow Food Chicago's annual fundraiser where chefs each cook a different animal from a different farm. In addition, the event will incorporate items from the Ark of Taste, Slow Food's living catalog of over 1100 delicious and distinctive foods facing extinction worldwide. Goose Island brewers have created a special Ark of Taste beer for this event only! And to accompany the nosh, DJ Lawrence Peters will be spinning classic country music. Peters plays with the Golden Horse Ranch Band, among others.
CHEFS + MENU ITEMS: Ashlee Aubin, Wood - Cazuelo de Cordero or Spanish style lamb stew with lamb purchased from Catalpa Grove Farm in Dwight, IL
Keith Carlson, Dia De Los Tamales - Slow Braised Bison & Manoomin Tamales on Tennis Ball Lettuce with Roasted Poblano Sauce & Beaver Dam Pepper Vinaigrette. Bison purchased from Cooks Bison Ranch in Wolcottville, IN.
Greg Gunthorp, Gunthorp Farms - Spit roasted pig and sausages from his Indiana farm.
Andrew Hroza, Goose Island Brewpub - BBQ Braised Beef Shanks, Smoked BBQ Shortribs, and Smoked BBQ Beef Hearts with a Paw Paw Barbeque Sauce and Cornbread. The beef is purchased from Slagel Family Farm in Fairbury, IL.
Alex Pilas, Eataly - Grilled Turkey in "Porchetta" with Beaver Dam Pepper Salsa Verde; Tuscan Style Fennel and Garlic Rubbed Turkey and Salsa Verde. The pasture-raised turkeys are purchased from Garden Gate Produce, part of Spence Farm's The Stewards of the Land.
Sean Sanders, Browntrout - Goat carnitas taco, crème fraiche, rooftop cilantro with goat purchased from Catalpa Grove Farms in Dwight, IL.
Dessert: Patrick Cloud and Carrie Rubinas, Bang Bang Pie Shop - Chocolate Pecan Pie and Cherry Pie.
Vegetable dish: Kim Gracen, Heartland Cafe - Vegetarian Breakfast Pie: Baked Eggs, Cheese and Spinach in Puff Pastry with a Savory Sauce wit spinach purchase from Montalbano Farms.
EXCLUSIVE EVENT-ONLY BREW: Goose Island's Paw Paw Meridian, a single hop IPA with Paw Paw fruit, which is listed on the Slow Food Ark of Taste, and sourced from Integration Acres Farm in Ohio. At 5.0% abv you can drink it all day. It has a hazy straw color, rich fruit and citrus aroma, and a creamy mouthfeel with a dry finish.
Admission price includes a commemorative glass from which to drink a selection of Goose Island beers.
All of that would be enough, wouldn't it? Yet, while you are satiating your appetite and swayin' along to the music, you'll be helping to raise funds for programs for Slow Food Chicago, a not-for-profit organization. Have fun! Eat well! Do good!
As always, this event is 21 + over (please bring I.D's) and will be held rain or shine. Once tickets are purchased there are no refunds.
