Course 1 Yellowtail "Tidal Pool" Seaweed, avocado, and applications of spring citrus
Course 2 Spring Forest Floor "Cappuccino" A rich, velvety foraged mushroom bisque, parmesan froth, and local mushroom dust
Course 3 Volcanic Beef "Charcoal" Modernist carrot lava, vegetable ash, blackberry leather shards, black garlic sauce, Hawaiian black sea salt
Course 4 Meyer Lemon Tart "Reimagined" Lemon curd spheres, basil gel, shortbread crumble, torched meringue, fennel pollen, and gold leaf

These fundraising dinners take place in the Shorewood Culinary Arts classroom dining room. Money raised at these events fund Culinary Arts education, including the purchase of new kitchen equipment, teaching materials, field trips, student Chef coats and garden supplies.
