Big NEWS: The Second, "Up and Comer, Sunday Supper" is official! Only a few tickets left!
Being a Seattle foodie is to know the big name chefs like Jason Wilson, Brendan McGill, Mike Easton, Jason Stratton and others. At The VUDE, we have been thinking, while the events we have held with these chefs have been great, there are a whole group of new chefs who are ready for their breakout performance!
And so an idea was born. We have been scouring the vast Puget Sound wilderness in search of some of the best chefs that are "in the shadows" and who may not have gotten the headlines...yet!. And with that, The VUDE presents a dinner series, called "Up and Comer Sunday Suppers."
For the second Up and Comer Sunday Supper, we have the talented Chef JJ Proville, currently (but we think he will have his own place some day!) at Il Corvo Pasta, joining us March 16, 2014, from 5:30pm to 9:00pm. He is preparing a six course meal, using the freshest local ingredients, with wine pairings, featuring Hand of God Wines, and cocktails provided by Bluewater Distilling and Rain City Spirits!
Born in Los Angeles to French parents, JJ Proville spent the first ten years of life eating sushi and Central American food in sunny California before moving back to France with his family. Attending the International School of Geneva, he lived in nearby Haute-Savoie, France: a land known for pungent cheeses, cured meats and decent skiing. After eight years spent immersed in French culture, Proville moved to Montreal, Canadaanother food paradisealbeit in a slightly different climate zone.
Graduating from McGill University in 2005 with a business degree, Proville set his sights on New York City where he made a brief two-year foray into the world of finance, starting a currency trading firm in Midtown Manhattan. His interest in the field was short-lived, however, and an editorial position at budding food website StarChefs.com would provide a bird's eye perspective of the evolving state of chefs, restaurants, and food across the country over the next two years.
After many tastings, published articles, and a James Beard media award nomination, Proville worked for a wine store in the famed Chelsea Market before beginning his restaurant career under Chef Michael Anthony at Danny Meyer's Gramercy Tavern. The next two years would have a major influence on his cooking, taking cue from Anthony's deep loyalty towards local farmers and their produce, as well as the natural, harmonious plating styles Gramercy Tavern is known for. During his time there, Proville also managed the sous-vide program, learning how to harness one of today's most useful modern kitchen tools.
At the other end of the restaurant spectrum, the much-loved 40-seat restaurant and cocktail bar Fort Defiance in Red Hook, Brooklyn would be his next stop. But within a year, a flooded apartment from Hurricane Sandy's violent 2012 storm surge would put a swift pause to normal life in the quaint, bayside neighborhood. Faced with a quick decision, Proville was soon on his way to Seattle, determined to open a small seafood restaurant in a city teeming with some of best fish and shellfish in the world.
Through a childhood friend, Proville connected right away with the much lauded Chef Mike Easton, who was just getting ready to open the second incarnation of Il Corvo Pasta in Pioneer Square. It has now been a busy, successful year at Il Corvo, and Proville happily continues to enjoy the high quality of the Seattle lifestyle as well as planning his own restaurant, which will focus on local seafood and farmers' market produce.
JJ is very exciting to join us at The VUDE, for what is sure to be a memorable evening. VUDE members will be able to attend these Up and Comer Sunday Suppers for a suggested $99 ALL INCLUSIVE, instead of the normal $125. This includes appetizers, wine pairings, cocktails, and the multi-course meal.
