Umami: The Fifth Taste
On Wednesday, April 29, 2009, let's taste UMAMI with sake and wine! What is UMAMI, you ask? UMAMI is the fifth taste in addition to sweet, bitter, salty and sour. It can be meaty or savory but compared to the four other tastes UMAMI is quite subtle. It is commonly blended with other tastes to expand and round out flavors. We will be treated to a special guest appearance by an expert in UMAMI from the UMAMI INFORMATION CENTER of Japan. She will explain everything you need to know about UMAMI. You will taste the flavor of UMAMI in specific ingredients from the world so you understand its distinct qualities. Then we will enjoy dinner prepared with UMAMI ingredients, and sake and wine to complement each course. The menu will include: Japanese, Thai, Vietnamese and Italian.
