La Cocina Knife Skills Series
If you a) have a food business, b) are an accomplished home cook, or c) don't know which end of the knife to hold, these workshops are for you. Knife skills are the starting point for nearly all cooking, no matter the style, and with proper technique and confidence, you might just become a culinary master.
On February 5th, we will focus on knife basics: construction, choice, sharpening, safety and storage. You'll have the opportunity to purchase knife sets, or just learn how to use your own better.
February 19th is all hands-on chopping. We will cover the basic knife cuts from dice to julienne with each student's work reviewed by the culinary staff. Many carrots and onions will be harmed in the process.
Our last class on March 5th will cover the more complex world of butchery. After demos and hands-on work, you'll leave thoroughly informed on how to de-bone, truss, scale and clean poultry, meats, fish and shrimp.
