Pork Bellies: The Secret Financial Life of Your Food with Kara Newman / Culinary Historians of NY

---------- They almost weren't called "pork bellies." They saved the Chicago Mercantile Exchange from near-extinction. And after decades of neglect, pork belly is now considered a delectable restaurant menu mainstay. CHNY member Kara Newman will explain just what pork bellies are and how they came to be traded on the commodities exchange, recounting their history from curbside meat trading in New York in the late 1800s to the recent emphasis on "heritage" pig breeds. Bacon-y refreshments will be served, and after the program, Jimmy's regular menu and a selection of artisanal beers and ales will be available for purchase.
Writer Kara Newman has covered topics related to food and finance (and sometimes both) for over a decade. She is the author of "Spice & Ice," a book on spicy cocktails (Chronicle Books, Fall 2009). Her next project focuses on a culinary perspective of the commodities markets.
