Slow Food Miami and Friends of the Everglades invite member, friends, associates, food and Everglades enthusiasts to join us at the Gables Green Market to celebrate local, sustainable, and good clean fair food.  We are all about our local food and local environment.

Back in the day..........
The early settlers thought that stone crab was as rare as nightingale tongues and did not often have a chance to enjoy this seasonal crustacean. When they did, they served them with a hearty ale and Cuban bread. They had long been eaten in Cuba but did not really catch on until the 1920s.  Joe Weiss, a waiter from New York, moved to Miami and opened a 6 table eatery on Alton Beach(Miami Beach). He was the first to discover that serving them chilled, improved the flavor and firmed up the flesh. Joe Weiss favored simple melted butter for dipping but enthusiasts argue for his flavorful mustard sauce.
Stone Crabs are ecologically interesting because their claws are renewable and the crabs themselves are recycled.  Stone Crab claws are in season from October 15 to April 15.
