Tandem Pairings III: Slovenia Rising
The wines of Kabaj, from northeastern Slovenia, are truly extraordinary and unique. Jean-Michel Morel was born in Bordeaux, but found his calling while making wine in the ancient ways traditional to Georgia. Made from white wine grapes fermented for up to a month on their skins, these are amber-hued wines that take on more of a character of reds: that much intensity, power and drive.
This sometimes controversial practice has surfed a bit of a trend recently, but Morel is a true master, and Wine & Spirits Magazine recently recognized the greatness of Kabaj, naming it one of their Top 100 Wineries of 2013. We are humbled, grateful, and just super excited to host Jean-Michel Morel, who will pour several traditionally fermented wines as well as his internationally coveted Amfora, which is vinified in enormous Georgian kvevri, or clay amphorae, dug into the ground.
