Breaking Bread with 3 Fonteinen
Last year Webbs City Cellar was selected by Brouwerij 3 Fonteinen to serve a select range of their limited beers, otherwise only sold in Lot, Belgium at 3 Fonteinens lambic-O-droom tasting room. While this honor had to be postponed due to COVID-19, we are proud to announce that on 11/8/2020 we will be hosting Breaking Bread with 3 Fonteinen: a limited and ticketed event that will provide exclusive access to 3 Fonteinen bottles served ONSITE ONLY, along with safely and individually packaged LOKO Cuisine cheese & charcuterie board with accoutrements for guests to enjoy in our private beer garden and cellar. The bottles below (132 bottle count) are a part of Brouwerij 3 Fonteinen Speling Van Het Lot (Twist of Fate) series, which are small batch experimental brews, barrel maturations, fruit macerations, and/or blends, given an order number and name. Give these lambics time to open up and evolve in the glass. Taste, savor, and experience with the best of friends, old and new:

3 Fonteinen Oude Geuze Vintage 2016 - 7.3% ABV - Bottled 02/09/2016
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water
Sometime in late 15/16 season  In particular, in the autumn of 2016, after six-months in the warm room, this Oude Geuze had an exceptional storage potential. That is why we have allowed it to mature further to make it stand out. Give the Dude Geuze Vintage time to develop in the glass.

3 Fonteinen Speling Van Het Lot I.I: Nocturne Valavond (Nightfall) - 8.1% ABV - Bottled 09/20/2017 (936 bottles produced, 6 bottles available)
Ingredients: 100% Malted Barley (Pils Malt, Pale Ale Malt, Cara Malt, Chocolate Malt), Old Hops, Water, Organic Honey
Somewhere in 2015, Armond and Michaël brewed a beer according to the lambic process, but with at total absence of wheat and with a wide variety of malts instead of pale malts only. This beer was then aged on wooden barrels for more than 30 months. Surprisingly, the color of the resulting spontaneously fermented beer was not the same! While all beers are bottled straight from the barrels, they made 3 different versions: the lightest color: Nightfall (I.i), the darkest in color: The Darkest Hour (I.iii) and the blend of both: The Hour of the Wolf (I.ii).

3 Fonteinen Speling Van Het Lot I.II: Nocturne Het Uur De Wolf (The Hour of the Wolf) - 7.4% ABV - Bottled 09/20/2017 (1,338 bottles produced, 6 bottles available)
Ingredients: 100% Malted Barley (Pils Malt, Pale Ale Malt, Cara Malt, Chocolate Malt), Old Hops, Water, Organic Honey

3 Fonteinen Speling Van Het Lot V.II: Ferme Framboos Blended & Alive - 6.3% ABV - Bottled 09/20/2017 (1,309 bottles produced, 18 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Organic Raspberries (42%), Organic Honey
Ferme Framboos is the result of macerating hand-picked whole organic raspberries on one-year old 3 Fonteinen lambic. The maceration period was more than 9 months at an intensity of one kilo of raspberries per liter of lambic. This version has been back-blended with young lambic and we added some organic honey just prior to bottling. The resulting intensity still is at 420 grams of raspberries per liter of raspberry lambic. The raspberries originate from De Fermented Framboos, a 100% organic fruit farmer in Huldenberg, South-East from Brussels, about 25 kilometers from Brouwerij 3 Fonteinen.

3 Fonteinen Speling Van Het Lot VII.IX: Zotte Kadeeën Framboos + Braam Blended & Alive - 5.8% ABV - Bottled 06/19/2018 (967 bottles produced, 18 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Organic Raspberries and Organic Blackberries
This 7th version features a range of fruit macerations on freshly emptied Bordeaux barrels from Château Pabus. These high quality French oak barrels were used for a unique integrated vilification technique, including grape peel maceration in the barrel itself. The name refers to the abundant creativity of the youthful and passionate team of 3 Fonteinen, that likes to explore within the traditional lambic boundaries. This fruit lambic is the result of a short maceration of organic raspberries and organic blackberries for 2.5 months. This fruit lambic was then blended with young lambic and a final fruit intensity of 304 grams of fruit per liter of bottled Framboos & Bram lambic was obtained.

3 Fonteinen Speling Van het Lot VII.X: Zotte Kadeeën Pruim Blended & Alive - 6.2% ABV - Bottled 06/19/2018 (964 bottles produced, 18 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Plums
This 7th version features a range of fruit macerations on freshly emptied Bordeaux barrels from Château Pabus. These high quality French oak barrels were used for a unique integrated vilification technique, including grape peel maceration in the barrel itself. The name refers to the abundant creativity of the youthful and passionate team of 3 Fonteinen, that likes to explore within the traditional lambic boundaries. This plum lambic is the result of a short maceration of plums for one month. It was then blended with young lambic and a final fruit intensity of 340 grams of plums per liter of bottled plum lambic was obtained.

3 Fonteinen Speling Van het Lot VII.XI: Zotte Kadeeën Cassis Blended & Alive - 6.5% ABV - Bottled 10/18/2018 (1,000 bottles produced, 12 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Black Currants
This 7th version features a range of fruit macerations on freshly emptied Bordeaux barrels from Château Pabus. These high quality French oak barrels were used for a unique integrated vilification technique, including grape peel maceration in the barrel itself. The name refers to the abundant creativity of the youthful and passionate team of 3 Fonteinen, that likes to explore within the traditional lambic boundaries. This cassis lambic is the result of a maceration of black currants for 5.5 months. I was then blended with young lambic and a final fruit intensity of 268 grams black currants per liter of bottled cassis lambic was obtained.

3 Fonteinen Speling Van het Lot VII.XIII: Zotte Kadeeën Rabarber Blended & Alive - 4.3% ABV - Bottled 10/19/2018 (788 bottles produced, 6 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Rhubarb
This 7th version features a range of fruit macerations on freshly emptied Bordeaux barrels from Château Pabus. These high quality French oak barrels were used for a unique integrated vilification technique, including grape peel maceration in the barrel itself. The name refers to the abundant creativity of the youthful and passionate team of 3 Fonteinen, that likes to explore within the traditional lambic boundaries. This rhubarb lambic is the result of a maceration for 6 months and was then blended with young lambic prior to bottling. The final rhubarb intensity is 349 grams per liter of bottled Rabarber.

3 Fonteinen Speling Van het Lot VIII.II: Schaarbeekse On a Toast (Medium) Blended & Alive - 6.7% ABV - Bottled 04/04/2018 (1,279 bottles produced, 18 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Schaarbeekse Sour Cherries
This 8th version features the maceration of Schaarbeekse cherries on charred/toasted barrels. These noblest of sour cherries have been sourced in the gardens of and hand-picked by more than 50 families around Brussels. This Schaarbeekse On a Toast has macerated for 265 days on fresh 1,000 liter medium toasted French oak barrel, in a proportion of 1 kilo Schaarbeekse cherries per liter of lambic. After the maceration, the fruit lambic was blended with young lambic for a continued fermentation in the bottle. The total fruit intensity is 397 grams of fruit per liter of bottled Schaarbeekse Kriek.

3 Fonteinen Speling Van het Lot VIII.III: Schaarbeekse + Framboos On a Toast (Medium) Blended & Alive - 6.3% ABV - Bottled 04/05/2018 (2,431 bottles produced, 12 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Schaarbeekse Sour Cherries & Organic Raspberries
This 8th version features the maceration of Schaarbeekse cherries on charred/toasted barrels. These noblest of sour cherries have been sourced in the gardens of and hand-picked by more than 50 families around Brussels. This Schaarbeekse On a Toast has macerated for 266 days on fresh 1,000 liter medium toasted French oak barrel and they added the same proportion of organic raspberries from the Ferme Framboos. After the maceration, the fruit lambic was blended with young lambic for a continued fermentation in the bottle. The total fruit intensity is 278 grams of fruit per liter of bottled fruit lambic.

3 Fonteinen Speling Van het Lot IX.I: Aardbeiiraties Bio Aardei Raw & Uncut - 4.6% ABV - Bottled 06/19/2018 (515 bottles produced, 6 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Organic Strawberries
This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimizing the unpleasant phenolic characteristics of the small pits. For this strawberry lambic, they used organic strawberries from the Ferm Framboos and then macerated on a Château Pabus barrel. The maceration period was very short - one month - and was immediately bottled afterwards, followed by a longer bottle conditioning. The fruit intensity is 366 grams of strawberries per liter of bottled Bio Aardbie.

3 Fonteinen Speling Van het Lot IX.II: Aardbeiiraties Aardei Raw & Uncut - 5.3% ABV - Bottled 07/17/2018 (776 bottles produced, 6 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Strawberries
This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimizing the unpleasant phenolic characteristics of the small pits. For this strawberry lambic, they macerated strawberries on a 2,000 liter feeder with young lambic. After 1.5 months, they bottled 600 liters with a fruit intensity of 462 grams per liter of bottled Aarbei. The remaining strawberry lambic was then used as a basis for a second maceration with sour cherries.

3 Fonteinen Speling Van het Lot IX.III: Aardbeiiraties Bio Aardei + Kriek Raw & Uncut - 5.9% ABV - Bottled 10/18/2018 (582 bottles produced, 6 bottles available)
Ingredients: 60% Malted Barley, 40% Unmalted Wheat, Old Hops, Water, Organic Strawberries & Sour Cherries
This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimizing the unpleasant phenolic characteristics of the small pits. For this fruit lambic, they macerated strawberries (30%) and cherries (70%) separately on two different oak barrels for a few weeks. The fruit lambics were then blended and put on a 400 liter oak barrel for another 6 months of aging and bottled afterwards. The fruit intensity is 500 grams of fruit per liter of bottled Bio Aardbei + Kriek.
