Sacred & Profane Abbey Ale Prix Fixe Dinner
We're bringing in the Sacred (global Kosher/Jewish chef Noah Arenstein of Scharf & Zoyer) and the Profane (whole hog pork dishes courtesy of Arrogant Swine's Tyson Ho) to pair alongside a great selection of Abbey Ales chosen by Chris Cuzme and Mary Izett of Heritage Radio Network's Fuhmentaboudit! Amuse Courses:
Latkes with Pimento Cheese and Wild Boar Salami Yiddish Sushi: kasha ball, horseradish, smoked whitefish, torched lardo, chives Sweet and sour pork meatballs
Mains: Abbey beer braised Cholent with beans, barley, chicory and fall vegetables, pork hock and tea eggs. Cubano - Ham and cheese kugel, Tyson's 12 hour oak smoked pork shoulder, gruyere, mustard and pickles Dessert:Porky Sundae - An ice cream sundae with crispy pork chicharroons
Beers will include:
Barrier Belgian Pale Ale Grimm Artisanal's Bees in the Trappe (a honey Trappist ale) Ommegang Abbey Dubbel Voodoo Gran Met (a Tripel with Pierre Celis white yeast and beets) Ommegang 3 Philosophers Quad
Plus possibly a few growlers of Belgian style beers from Chirs Cuzme and 508 Gastrobrewery.
