James MacKnight from River and Glen, a sustainable restaurant food purveyor that provides seafood (game/meat and charcuterie) products that are harvested humanely from sustainable sources will talk about the importance of sustainable fishing and his sources for products. Andrew Wood from Russet Restaurant on Locust Street in downtown Philadelphia, one of their clients, features a daily changing Italian and French-inspired menu using the finest local and seasonal ingredients. He will feature a food demo and tasting from one of his recipes sourced from River and Glen. We will match that with a glass of wonderful Gruner Veltliner, the perfect Austrian white varietal made for seafood
