Treme: A New Orleans-Style Off the Menu Dinner with Cookbook Author Lolis Elie
We think this event particularly worthy of your attention. It features one of our most popular chefs' series, Off The Menu, paired with a reputable and charming guest author, Lolis Eric Elie, and is tied together by a prominent practitioner of Slow Food-friendly cooking, Chef Thomas Smith of the Worthington Inn. All of this is combined, mixed, and steeped in the full-throated flavors of Louisiana.
Mr. Elie, a New Orleans native, has been a columnist for the Times Picayune, a contibutor to Gourmet Magazine, is the author of Smokestack Lightning, and a writer for the HBO series 'Treme', which features the foods and restaurant personalities of the city prominently. His newest book, 'Treme - Stories and Recipes From the Heart of New Orleans,' expands upon the show and features a stunning variety of recipes from many of the real-life chefs shown on the screen.
When we approached chef Smith about the idea of cooking recipes from the book for a Slow Food audience, he enthusiastically agreed without a moment's hesitation. Within a day of seeing the book, he already had our menu planned out. It reads as follows:
Amuse: A Surprise
Soup: Smothered Turnip Soup
Seafood: Creole Succotash with Shrimp & Smoked Pork Sausage
Entree: Bacon Wrapped Pork Loin with Smothered Greens, Butternut Squash, and Cane Syrup Jus
Dessert: Cushaw Pie
We are particularly excited about dessert because Cushaw is an Ark of Taste heirloom squash variety.
