Holdfast and J Bridger Collaboration
Holdfast welcomes NYC's J. Bridger in an exciting collaboration.
J. Bridger is Garrett Eagleton (founding Sous of Clyde Common) and Leif Sundström (founding Beverage Director/GM of Le Pigeon), a developing restaurant project returning to their roots in Portland, OR to collaborate with Will Preisch of Holdfast for our most exciting 'pop-up' yet.
The three of us have all worked together before, at Le Pigeon in 2007, and are thrilled to come together once again. This dinner expands upon our current format with Will Preisch and Garrett Eagleton combining to provide an even more provocative approach to food, as well as an expanded list of beverages acutely paired by Leif Sundström.
