On Saturday, March 14th from 3pm-5pm, you will be given the tools to make dairy free cooking at home easy. You'll learn the basics of making dairy free milk (with recipes). Using a homemade plant milk, we will make a vegan bechamel (French "mother sauce") together. We will discuss how to make other "cheezy" sauces using this base sauce. Lastly, we will make a sliceable cheese and discuss how to use at-home fermentation to further develop cheesy flavors! We aim to create a fun learning environment (with plenty of snacks!) that will give attendees the confidence to make their favorite dishes, sans dairy, at home.
Darë Vegan Cheese was created by Gwendolyn Hageman after she fell in love with the craft of vegan cuisine as the vegan chef at Warren Wilson College. Learning new ways to create classics is her favorite part of being a chef and she knows from experience that there's nothing more challenging than trying to make something you know with ingredients that you don't. This workshop is designed to give you a basic understanding of dairy-free, vegan cooking, as well as giving you the knowledge to properly stock your home pantry to make dairy free cooking easy.
