Opimian Wine Club de Vin is delighted to welcome Carole Doyard-Mahé to Canada. Come meet Carole at Jazz Bistro in Toronto, mingle with other members, and taste wonderful Champagne! Carole is a 4th-generation winemaker in Champagne. Her own grandfather Maurice Doyard co-founded the Comité Interprofessionnel du Vin de Champagne (CIVC), one of the first-ever regional wine committees created in France. She joined the family business in 2005 while studying viticulture. Carole is now in charge of the vines, the wines and exports. Doyard-Mahé has eliminated herbicides in the vineyard the past two years and works with compost to protect the soils. Carole uses parcel-based vinification to create more precise wines for her upcoming cuvées. All of the Champagnes she produces come from her Chardonnay vineyards in Vertus at the southern end of the Côtes des Blancs. All are classified as Premier Cru. Enjoy Champagne, Jazz and the beginning of the Holiday Season. The excellent Doyard Champagnes will be paired with pass around appetizers upon your arrival, a substantial course once we sit down, and a dessert.
