Cream of the Crop: The Terroir of Dairy at Winter Hill Farm
We are just so excited about this! Rosemont Market's longtime friends at Winter Hill Farm will show us their farm and registered Randall and Jersey cattle, and we'll have a communal feast based on their uniquely delicious milk, eggs, produce and meat. We will pair the foods with exceptional wines and local beers.
The farm is so, so lovely: you (and some cows) will dine amidst beautiful gardens and rolling pastures. We'll start with a tour of the farm, nibble some of farmer Sarah Wiederkehr's terrific cheeses, and hold a small milk tasting (literally minutes after milking!).
Then, it's on to dinner: Rosemont chef Brad Messier is already busy constructing an amazing menu that will use Sarah and her partner Steve Burger's amazing heirloom tomatoes and other produce, milk, yogurt, eggs, pork and veal. (Yes, veal. We don't mention the "terroir of dairy" lightly. Veal can be humanely raised, and is an essential component of dairy production!). Steve and Sarah will tell us all about their animals and farm, the benefits and demands of non-pasteurized dairy, and more.
