Funky Fermentation at 2nd Shift Brewing
Fermentation, an age-old process that our ancestors relied on to enhance the shelf life of food, is having a big resurgence. Fermented foods and beverages are more popular than ever and touted as more nutritious and digestible. Here in St. Louis we have a strong community of fermentation devotees and experts, and they practice their fermentation craft each day. You will hear first-hand from a chef fermenting honeys, a brewer, a wine expert, and a kraut/pickled veg maker and learn how ancient techniques are appearing in new and exciting ways. In addition to the panel and demonstrations, you will taste their creations and indulge in some tasty bites! A tour of 2nd Shift Brewing will commence at 5:30.
Our evening will also feature an expert panel moderated by Dame Catherine Neville, Publisher of FEAST Magazine and Producer of TasteMakers. The panel includes: * Libby Crider, Owner/Brewer 2nd Shift Brewing Company * Alisha Calvert, Dame/Sommelier of Olio & Elaia * Anya Corson, Chef/Owner Anyas Apothekere * Katie Harris Belahoula, The Probiotic Lady, fermentation instructor, owner of Katie's Cultured Kitchen, and a Microbiome Scientist from Washington University's Genome Center
