WA Meat Up Leadership Summit
Presented collaboratively by the WSU Food Systems Program and the WSDA. Through our unique brand of Food Systems Innovation Events, we are inspiring change, building resilience, fostering viable farm and food businesses, and promoting scaled processing and distribution.

Are you a PRODUCER, PROCESSOR, RESTAURANTEUR or RETAILER, RESEARCHER or RESOURCE PROVIDER, REGULATOR, ADMINISTRATOR, or LEGISLATOR interested in developing a strong local meat economy? Then you should be at the WA MEAT UP!!!

A $10 Commitment Fee reserves your space for parking, your choice of field trip, Seattle Culinary Academy lunch featuring lamb from BCS Livestock, and an Initiative Planning Session. The day will run from 8 am - 3 pm.

YOUR CHOICE OF FIELD TRIP:

1. FARMING AND SLAUGHTER FIELD TRIP

A hands-on field trip to connect with some farming and slaughter visionaries. Park at the Seattle Culinary Academy (SCA), then head to Jubilee Farm to check out their grass-fed beef livestock infrastructure. The second stop will be Carnation Farms for a sneak peak at the development of a USDA mobile processing unit and newly opened Falling River Meats retail storefront. Head back to SCA for a locally sourced lunch. Field Trip includes parking and transportation.

8:00 am  8:45 am Travel from Seattle Culinary Academy to Jubilee Farm, (229 W Snoqualmie River Rd NE, Carnation, WA 98014)
8:45 am  9:30 am Jubilee Farm Tour
9:30 am  10:00 am Travel from Jubilee to Carnation Farm
10:00 am  11:00 am Carnation Farm / Falling River Meats Tour
11:00 am  11:45 am Travel from Carnation Farm to Seattle Culinary Academy
11:45 am arriving back at Seattle Culinary Academy

2. PROCESSING AND VALUE-ADDED FIELD TRIP

A hands-on field trip to connect with some processing and value-added visionaries. Park at the Seattle Culinary Academy (SCA), then head to Ulis for a short tour, talk and sample at their iconic processing facility. The second stop will be a debut tour at the newly opened Samuli location in Kent, featuring their legacy salami operation. Head back to SCA for a locally sourced lunch. Field Trip includes parking and transportation.

9:15 am  10:00 am Ulis Tour (45 Minutes)
10:00 am  10:30 am Travel from Ulis to Salumi, KENT (30 minutes)
10:30 am  11:15 am Salumi Tour, KENT
11:15 am  11:50 am Travel from Salumi to Seattle Culinary Academy at Seattle Central College, 1701 Broadway BE2120, Seattle, WA 98122 (35 minutes)
11:50 am arrive at Seattle Culinary Academy
