Asian street food lovers, this is your opportunity to dive into the world of Vietnamese cooking with minimal fuss and major payoffs. Join James Beard award-winning author and Vietnamese food expert Andrea Nguyen to make handsome rice paper rolls, create outstanding banh mi sandwiches, whip up pho broth, and fry banh xeo sizzling rice crepes like a pro. You'll decipher regional differences as well as tinker with rice batter, noodles, pickles, spreads and fillings. You'll also explore seasonings that shape the iconic foods of Vietnam. The class culminates with a pho and banh mi bar!
Andrea will guide you through recipes and techniques, and discuss key ingredients such as fish sauce, herbs, and spices, including how to source them. She'll also share culinary history, regional differences, and modern work-arounds from her latest books, Vietnamese Food Any Day and The Pho Cookbok. Bring your copies or purchase them at the class for her to sign.
This is a 4-hour, hands-on class so be prepared to cook, tinker, and have fun. There will be lots of eating too. The recipes we'll make include:
- Spicy Clam and Herb Scoops - Jicama and Sausage Rice Paper Rolls - Banh Mi with Barbecued Chicken (Char Siu), Sriracha Aioli, Daikon and Carrot Pickle - Wok-Kissed Beef Pho Noodle Soup - Sizzling Rice Crepes (Banh Xeo) - Nuoc Cham Dipping Sauce - Cashew Sesame Brittle

Cancellation Policy: A full refund less the modest registration process fee is available up to two weeks prior to the class date. If you need to cancel less than two weeks prior to the class date, you may request a credit to be used for another class within the calendar year. No refunds or credits will be issued less than 5 days before the class date.
