de Porres Fiestas Patrias
On July 28th at 6:30 PM we will return to one of our favorite stages, Moonwater Farm, to commemorate Fiestas Patrias, Peru's Independence from Spain. We'll begin with pisco sours and tacacho, an Amazonian appetizer of fried plantains and pork rinds. Next is Tiradito Nikkei, wild local yellowtail flavored with lime and shoyu. Chupe de Camarones made with ridgeback prawns, cheese, quail egg, and the Andean mint huacatay follows. For our third course Pablo has chosen Sarza de Oreja, a bright and citrusy salad of pig ears, Andean peppers, and red onion commonly found in Arequipa and Cusco. Seco de Pato, a Northern Peruvian braise of duck, cilantro, spices, and chicha de jora will be our main. And for dessert: sweet potato pie (more Southern than South American, admittedly) and homemade chancaca (Peruvian raw sugar) ice cream.
