Next Stage Cooks: Cambodian (Khmer) Cooking
Instructor Chef Nak lives in Cambodia, where she is working to make Khmer food famous around the world. She teaches cooking classes, does private dining parties, cooking shows on TV, and has just written a beautiful cookbook, Recipes from a Khmer Home Kitchen. We are excited to have Nak teach a class at Next Stage while she is visiting family in Putney this summer.
This is a demonstration class, not hands on. In this class you will have a chance to eat 4 different Cambodian dishes. Chef Nak will demonstrate how to cook 3 of the 4 dishes, 2 savory and 1 dessert. The fourth dish, an appetizer, will be served while you watch the first dish being prepared. You will learn techniques, flavor combinations, history and culinary culture. She will explain to guests the names, uses, nutritional qualities and history of the ingredients used, and will answer any of your questions.
MENU
Appetizer: Prohok Khtis (Prohok, Pork, Lemongrass Paste, Coconut Cream). Prohok Ktis is a dipping dish that is accompanied by many kinds of raw and crispy vegetables.
Salad: Shrimp with watercress
Main: Grilled eggplant with pork
Dessert: Melon with sugar syrup and coconut cream
