Bernal Cutlery w/ Chef Tia Harrison: Kid's Knife Skills

As parents, both Josh and Tia understand the challenges in bringing children into the fold while pulling a meal together, and feel that with the right support and sense of community in taking on this challenge, we can bring children closer to the food they eat (and their family!). We invite children and their caregivers to join us in this exciting endeavor!
Tia Harrison will focus on basic knife skills with the kids in the class: knife safety and how to properly handle a knife. Young students will prep a quick dinner recipe that they will be able to take home and prepare with their families. Says Harrison: "Dinner is a time where families gather to share stories of the day and pass along family recipes, creating a food heritage for their family. Children who participate in the preparation feel the weight of their contribution and see the resultsa tasty nourishing meal to be proud of. And they are far more likely to eat that leafy green if they participated in its preparation." We agree!
Josh Donald will focus on techniques and good habits for our adult students to feel comfortable and confident with one of our most basic kitchen tools, the chef's knife. Unfairly feared because of it's size and sharpness, parents often pass their own insecurities of this tool onto their children. Confidence and knowledge is the key, practice is the application. Josh will discuss his experience with effectively working with kids in the kitchen, providing expert tips for knife safety. He will cover the basics of the chef's knife (anatomy, history, handling, and storage), and then lead the class through whetstone sharpening.
Each child will leave with a knife from Bernal Cutlery.
About the instructors
Josh Donald has logged in over 10,000 hours of sharpening in the span of six years as the proprietor of Bernal Cutlery. Josh spends a lot of his time geeking out in his home kitchen, researching old knives and trying out his latest vintage and Japanese finds, often to the delight of his wife Kelly and to the consternation of his sons. Like Albert Einstein, Josh owns twelve identical sets of the same outfit and has never paid for a haircut.
Tia Harrison is Executive Chef and co-owner of Sociale, co-founder of The Butcher's Guild, a crafts-guild for meat professionals, and co-owner of Avedano's Holly Park Market, a neighborhood butcher shop that focuses on whole animal butchery. Since 2003, Tia has been Executive Chef at Sociale working to expand her expertise as a food professional in San Francisco. In 2007 Tia Harrison opened Avedano's; the first US women-owned and -run butcher shop with the inspiration of reviving the dying art of butchering by hand and supporting small farms as well as sustainable food systems. The Avedano's owners are leaders in the butcher's revolution whose focus is the support and education of the art of butchering, consumers, local farmers, community as well as whole-animal events, and things that are meaty and delicious. Tia Harrison developed a consumer butchery class that she teaches monthly at Avedano's. Tia is also hard-working mother.
