Square Peg Pizza & Arcade is Tyler Anderson & Bruce Kalman newest venture that will be located in Glastonbury, CT opening in early 2019.
$60 per person includes food and beverage pairing.
Tyler is the owner of The Cook & The Bear, Millwrights Restaurant, and Porron & Pina. A California native, Tyler Anderson was only 16-years-old when he began to learn about the craft of cooking in restaurant kitchens. Each experience helped him develop his culinary skills, his palate and eventually, his personal cooking style. Tyler has been mentored by some of the best chefs in the business including Charlie Trotter, Sarah Stegner and George Bumbaris. In 2012, Tyler fulfilled his longtime dream of becoming a restaurant owner, opening Millwright's Restaurant and Tavern in Simsbury, CT, where he crafts inspired New England Cuisine. Now as the Chef/Owner of Millwright's Restaurant, TheCook&TheBear in West Hartford, CT and Porron & Pina in Hartford. Tyler and his talented culinary team continue to draw inspiration from locally-grown ingredients and artisan-produced foods. They also can and preserve summer's harvest at the peak of its freshness for use during the winter months. Chef Tyler has been nominated four consecutive years in a row for the prestigious Best Chef Northeast James Beard Award (2014-2017), and in 2014 was named Chef of the Year by the Connecticut Restaurant Association. Tyler was also featured on BRAVO TVs Top Chef Season 15, Chopped and Beat Bobby Flay. A father or three, Chef Tyler is involved in many philanthropic works including The American Liver Foundation, Ct. Farmland Trust and Connecticut Children's Medical Center. He is also the Chef Chair for The Taste of the Nation Hartford event supporting Share our Strength in their fight against childhood hunger.
Bruce Kalmans Northern Italian cooking style embraces the diverse and abundant produce of California to create exquisitely balanced flavor profiles meant to warm the soul. He was the chef and co-owner of UNION in Pasadena, CA and is currently the chef and co-owner of Knead & Co. Pasta Bar + Market in L.A.s Grand central Market. His commitment to indigenous ingredients goes beyond the farmers market to build strong connections with local providers, keeping the operations carbon footprint low, supporting the local economy, and connecting diners to high quality vegetables, meats, and cheeses straight from the source. He is known for his passion for whole animal butchery and using 100% of the animal. He also is the founder of BK Brinery, an artisanal pickle company, providing restaurants with various pickled vegetables on the wholesale level, with retail packs available in the near future. The mindful chefs culinary career began in his hometown of Paramus, NJ. I started cooking at 13 in a local family-owned pizzeria, and I never looked back, he says. I really enjoy itbeyond the food, its about the energy of the kitchen, the camaraderie, the teamwork, its awesome. Every day is a challenge. He solidified his skills through a hands-on culinary program at Jersey Citys Hudson Community College, and, after rising through the ranks of local kitchens, moved to Chicago to serve as executive chef for restaurants including Okno, Green Dolphin, and Coco Pazzo. Kalman landed in Los Angeles in 2011 to help launch Santa Monicas Misfit, and later joined West Hollywoods The Churchill, at which he excelled in producing house made charcuteries, pastas, and desserts. Throughout his career, Kalman has gained recognition from James Beard, with a nomination for Rising Star Chef, and has appeared on the Food Network to earn a Chopped championship title, Beat Bobby Flay in which he was victorious, as well as on Esquire Network to win Knife Fight. Bruce was also a cheftestant on Top Chef, season 15 filmed in Colorado. Bruce has joined forces with fellow Top Chef contestant, Tyler Anderson, conceptualizing SQUARE PEG pizzeria, opening mid 2019 in the Hartford, CT area, with more locations to follow.
