Local Grains Kaiseki Dinner
Kamonegi and local restaurants utilizing Bread Lab's products are joining efforts to support Chef Niels Brisbane and his work at Bread Lab with a raffle and benefit dinner on Sunday, November 25 at 6pm.
WSU's Bread Lab conducts research on thousands of lines of varietal grains as part of its efforts to breed and develop varieties of grains and other crops to benefit farmers, processors, and end users. Thanks to Chef Niels Brisbane and the generosity of his restaurant team at Canlis, Brisbane was able to start the Canlis Research Kitchen where he utilizes his experience as a chef and food researcher to serve Bread Lab's purposes and bring its assortment of grains to chefs and into restaurant kitchens.
The Local Grains dinner will be a 9-course kaiseki dinner at Kamonegi beginning at 6pm by chef Mutsuko Soma and Japanese culinary instructor and cookbook author Sonoko Sakai. Raffle items will include items and meals provided by Bread Lab supported restaurants. The price of the dinner includes tax, 18 percent tip, and fees for Brown Paper Tickets. 20 percent of ticket sales and 100 percent of raffle sales will go directly to Brisbane and the Canlis Research Kitchen at WSU's Bread Lab, which provides grains and products from farmers straight to many restaurants and food operators in Seattle.
