Barrell Craft Spirits is a Merchant Bottler of fine American Whiskies, Bourbons, World Spirits, and whatever else strikes their fancy. They are based in Louisville Kentucky, but their products can come from just about anywhere.

What is a Merchant Bottler you ask? A Merchant Bottler controls their own bottling and facility, but used ingredients scoured from elsewhere to complete their products. Though Barrell Craft Spirits now runs a distillery, the look to others, who produced different types of distillate to create the most unique and delicious blends that they can create. There are no core items, and each batch is designed to be the best possible showing of any select group of barrels.

Barrell Craft Spirits is a 5 person company, visiting for this dinner is William Schragis, the National Director. William began his beverage career as a sommelier and bar manager in Eli Zabars restaurant empire. He then moved to retail and auction, heading up the Spirits department at Zachys Wine and Liquor in Scarsdale (where he was among the first to take on Barrell Bourbon Batch 1). Since then, William managed regional business development for The House of Agricole, worked to launch brands nationally as a brand ambassador, and enjoyed a stint as a part-time distiller for Kings County Distillery. He continues to be active on his own time in the New York wine and spirits world, writing for several publications and lecturing on distillation science at the Culinary Institute of America.

Bourbon Notes:

#005: 118.4 proof, 9 years old, Aged in American white oak barrels; finished in Bourbon, American brandy, and Amaro barrels, and Cognac casks, Notes - A balance of honey and spice, this whiskey conjures memories of old candy shops and autumn drams. Enjoy a dark, brooding sweetness balanced with wood and a hint of fire. The 118.4 proof unravels into long folds of complexity and contrast.

#002: 117.5 proof, 5 years old, Aged in Poland, Indiana and Kentucky, Notes - The Polish Rye is dry, with a rich nutty flavor, and pairs beautifully with the lush Indiana Rye, resulting in a sweet and savory balance of malted chocolate and roasted cashews.

#013: 113 proof, Selection of 5 and 8 year old barrels, Notes - Thick slabs of smoked bacon, tiny curls of cedar wood shavings, bitter chocolate pastilles and Georgia peach preserves wash over the palate in rapid succession. Subtle notes of open fire cooked corn bread dusted in zesty chili powder give way to crumbles of dehydrated oranges. Hints of salty crushed minerals and rich lemon curd round out this bourbon.

#016: 105.8 proof, Selection of 9 year 9 month, 11 and 15 year-old barrels, Notes - Early-morning bakery aromas lead into a sweet and oily palate of peach, milk chocolate and Italian roast coffee. Dark fruits develop in the finish along with a mineral note thats been constant throughout.
