Unsung illuminates the idea that some of the most delicious, enjoyable and memorable things to cook and eat are the foods most neglected in the modern kitchen: pea shoots, garnishing a tart of spring onion and bacon; fennel fronds, pounded into a piquant salsa verde; cardoons, braised and tossed with pasta and pecorino; kohlrabi, simmered with apple and pear and pureed into the most phenomenal soup. These overlooked foods are some of the most delicious and most affordable items at your farmers' markets and grocery stores.

nettles
nettle + potato soup, whipped creme fraiche, chive [blossoms]
braised nettle sandwich, mozzarella, chiles, olive oil

daikon
spring rolls with daikon + roasted yuba
radish (daikon, easter egg, black, watermelon) salad with labne + sprouts

watermelon rind
watermelon, buckwheat sprout + feta salad with fresh herbs + sumac
stir-fried pork belly with pickled watermelon rind

purslane
purslane + herb salad with potatoes, radish + pancetta

About Michelle
Michelle McKenzie is 18 Reason's Program Director and Chef. She has a knack for making simple food seem special and is full of amazing tips for making every meal memorable. Michelle's food seems at once healthy and hedonistic, elegant and effortless, and always attainable. She graduated from the University of North Carolina at Chapel Hill with a degree in nutrition and a minor in biochemistry, giving her a deep understanding of food properties and their complex implications within the human body. She later graduated from The Natural Gourmet Institute for Health and Culinary Arts, where she immersed herself in health-supportive cuisine prepared from whole, organic and seasonal foods. Since then, Michelle has worked at some of the best restaurants in the country and, most recently, spent five years directing NextCourse's Eat Ur Veggies program at Mission High School.
