WELCOME Hana Fuga-Yuzu Junmai Sparkling Sake Cocktail
1 TEIJIS SUNOMONO crab, shrimp, hamachi, tuna & salmon rolled in cucumber
SHIROSASA NIGORI Nigori is an unfiltered, cloudy sake, typically with a sweet, creamy texture. Shirosasa has a reduced sweetness compared to other Nirogi products, designed to make it a perfect aperitif. Its brewed in California to ensure freshness.
2 AGEDASHI TOFU lightly dusted & fried, hot dashi sauce, bonito flake
RAI JUNMAI Amazake, a sweet fermented, non-alcoholic rice beverage is brewed first as the base and then distilled to sake. This is a new and labor-intensive technique that results in pleasant earthiness that is not too bold nor meek with subtle hints of caramel on the nose.
3 MISOYAKI original sweet miso marinated black cod, sakura ginger
TARU CEDAR CASK AGED SAKE Traditionally served on special occasions with the ceremonial ritual of breaking the cask lid, this sake is aged in Cedar. Notice a woodsy aroma and rich, cedar finish.
CLEANSE Frozen Ikezo-Yuzu Jelly Sparkling Sake
4 OKONOMI-SUSHI selection of our finest specialty bites: marion & ducketts cups, blossom hill & jasmine roll
SAKE PLATINUM JUNMAI DAIGINJO The A-list category of the sake world. Each grain of rice must be milled to at least 50% removal of the outside grain and some brewers go as far as to remove 77% of each grain of rice. Light, typically more fruity and more fragrant, this particular Junmai Daiginjo is brewed in Hollister, CA using Calrose rice.
4 SASHIMI COURSE
OSAKAYA CHOBEI DAIGINJO This sake is made in Japan with the same rice milling ratio as the Platinum from California. Compare the two and identify the differences regional water and rice can make!
6 NIGIRI SUSHI COURSE
KARATAMBA HONJOZO Meaning Dry Wave. Rich & smooth yet very dry with caramel and mild maple syrup notes the perfect complement to proper sushi rice.
