Here just in time for Easter! The SLOW U Lamb Butchery & Feast Event.
Let Master Butcher Sara Bigelow of The Meat Hook walk you through the process of butchering a humanely and sustainably raised lamb from primals, sub-primals, and, ultimately, into roasts, chops, and miscellaneous cuts.
Feast on tastings prepared by Executive Chef Steve Dustin of Monument Lane, as he talks about dishes you can prepare at home from various lamb cuts.
Lamb Loin Carpaccio, Local Greens, Pickled Red Onion, Grated Farm Egg, Country Loaf Croutons
Roasted Leg of Lamb, Escarole, Hen of the Woods Mushrooms, Israeli Couscous, Mint
Food will be accompanied by local wine.
At the end of the meal, you can bid on the fresh cuts of lamb. (Cash, checks, and credit cards will be accepted.)
The night's pasture-fed lamb comes fresh from Ferraro Farm in New Jersey. The Meat Hook and Monument Lane are both Slow Food NYC Snail of Approval awardees.
Proceeds from this event support the programs of not-for-profit Slow Food NYC including the Urban Harvest program of good food education for New York City kids at schools in the South Bronx and Harlem, on the Lower East Side, and in Brooklyn and at a summer urban farm in Brooklyn.
