Endangered Spices: Experiencing Flavor Beyond Salt

While the media focuses on the over-consumption of sodium, there's another crisis happening in America's kitchens: the under usage of other spices and other seasoning resources.

What's the cause of this flavor draught? Well, take a moment to listen in on any cooking contest or tv show and you'll hear salt constantly equated with flavor. And while, yes, the white stuff is one of the greatest taste enhancers out there, there are many other means of creating sweet, salty, savory, and even umami tastes, without ever having to pick up a jar or shaker. We just seem to have forgotten about them.

In this demonstration, Jessica Goldman Foung, an expert in salt-free cooking and author of Sodium Girl's Limitless Low-Sodium Cookbook, will lead your palate through a taste-bud opening journey, starting with a single ingredients and then, using simple techniques, transforming it into a powerful tastemaker. All tricks that anyone, salt eater and those on a low-sodium diet alike, can use to make healthier, more creative, and totally impressive versions of their favorite dishes.
