Cooking for Compassion and Health - Intro to Making Miso
Miso (meee-soh) - a traditional Japanese fermented seasoning used for sauces and spreads, pickling vegetables or meats, and mixing with dashi soup stock to serve as miso soup. Are you interested in learning how to make this Japanese staple from scratch in a traditional way? Are you intrigued by one of the oldest cuisines in the world? Are you entranced by kitchen science? Are you fascinated by fungi? If you answered "yes" to any of these, this class for you!
The class will include a talk on the history of miso, its health benefits, different uses of miso, as well as time for question and answers.
The instructor and participants will make miso together and each participant will be able to take home one pound of 12-month-fermented soybean or chickpea miso.
Class size is limited to 5 persons.
Class will be held from 11:00 am to 1:00 pm in Chico in a spacious home kitchen in a beautiful and peaceful environment. The class fee covers the cost of the foods prepared that day and all handouts.
The class instructor is Keiko Tokuda, originally from Japan, but now a long-time resident of Chico, CA. Her first love is preparing traditional Japanese dishes, with an emphasis on fermented foods. She has held miso-making workshops and cooking classes on both macrobiotic and vegetarian cooking, all as part of her dream to heal people with food. She lives in Chico with her husband, ten-year-old daughter, and a black cat name Lucky.
The class is offered through the Chico Chapter of Dharma Voices for Animals and Sky Creek Dharma Center and is part of the Cooking for Compassion and Health series.
