Catalan Cooking class - winter saffron
Winter saffron cooking class 11th February
Difficult to harvest and more expensive than gold, saffron seems to be a herb that we only use in the UK now with rice, either Spanish paella, Persian pilafs or Indian biryanis. Some people do use them for simnel cakes or Scandinavian buns but saffron is a vastly underused herb in this country. Too precious (and expensive) to sit and the back of your kitchen cupboard unused and unloved, this class aims to show you some different uses for saffron that you probably haven't thought of yourself, but are all recipes that will be easily replicated at home. We will make: Xató - a winter salad with salt cod, curly endive and a saffron romesco sauce Chicken with prawns and saffron Roast vegetables with fennel and saffron oil Scrambled eggs with tomato and saffron Baked custard with honey and saffron
The cost for the class is £75 and includes a glass of wine as well the recipes. This is a completely hands on class in a relaxed atmosphere where you will feel like you are learning in a friend's kitchen rather than a formal setting. You will then be able to go home and replicate these recipes with confidence and ease for friends and family.
