Winter Gluteny
Paul Carrington, Executive Chef of Black Caviar Catering and personal chef to Bono of U2, as well Matt Cyr of Black Caviar, Stock, and formerly of Girl and the Goat in Chicago, are teaming up to make you 5 amazing courses of house-made pastas and breads made from local grains. Expertly paired hearty winter produce and proteins from Farmstand Local Foods to enhance all of the glutinous pleasures.
Menu:
Salad: Hearty greens, six hour roasted root veg, toasted bread gremolada, chicken fat vinaigrette
Bread: Fresh house-baked local grain breads with cultured cherry valley cream butter, local cheese, chicken liver mousse
Soup: Purple potato and local wheat dumpling, duck jus, and Taylor Shellfish clams and mussels
Pasta: Rabbit, wild mushroom, root veg, and wine ragout w/pappardelle
Dessert: Frangipane, custard, poached local pears
