Learn how to make two of the most popular- and versatile- styles of fresh cheese, as well as cultured butter (meaning it has live cultures added to it, which make for a more complex flavor profile). Once you've learned the technique, you'll be inspired to experiment at home by making compound (flavored) butters and using the ricotta as a base for sweet and savory dishes and in baked goods. In addition to hands-on production, class will include a farm tour (come dressed to snuggle newborn kids), a visit to the milking parlor at milking time, and snacks, lunch and non-alcoholic beverages. You'll get to take home recipes and any cheeses you make in class.
Please bring an apron, and come dressed to snuggle newborn kids on the farm tour (boots optional).
