CHARCUTERIE ACADEMY
A 1 Day Course with Chef Brian Polcyn
Join us with expert Charcutier, Chef Brian Polcyn, as he performs a three to four hour butchery and Charcuterie demonstration. The class will showcase European seam butchery, sausage, pate, terrine, and rillette making, proper brining, salting, and curing methods, and how to buy whole animals, breakdown the animal yourself, while keeping food cost low and turning a good profit. Chef will break down 1-half of a pig using nothing but a knife and saw. These classes are extremely educational and renowned chefs from across the country have attended Chef Polcyn's courses.
