18 Reasons Sunday, February 3rd, 11-3PM, Ticketed Knife Sharpening & Skills Intensive $100 for 18 Reasons members; $120 for the general public
Join master cutler Josh Donald from Bernal Cutlery and culinary master John Lee for a hands-on intensive workshop that will give you mastery over your knife. In a small-class room setting, learn how to sharpening your chef's knife from home with Josh, then switch to learn basic knife skills from John.
Josh will focus on using wet stones (that he will provide) to teach you the details of getting the perfect blade for your favorite knife at home, the best cutting boards to use and ways to keep your knife sharp longer.
John Lee will tackle the basic knife cuts to use in your kitchen- from knife safety to how to dice an onion perfectly. John will also talk about making stock at home and using all parts of the vegetable.
During the class we will sit down and eat a meal together. Each participant will go home with a bag of veggies, stock recipes and their newly sharpened chef's knife.
Josh Donald has logged in over 10,000 hours of sharpening as the proprietor of Bernal Cutlery. Josh spends a lot of time geeking out, researching old knives and trying out his newest Japanese, French, and vintage finds in his home kitchen to the delight of his wife Kelly, and often to the consternation of his sons. And like Albert Einstein, Josh owns 12 identical sets of the same outfit and has never paid for a haircut.
John Lee is a man about Bi-Rite. Previously an Assistant Store Manager for four years, these days you might see him pouring the latest staff favorite from Jura or breaking down half a pig- John has become a regular 18 Reasons instructor. When he is not hosting 18th Hour Cafe- he is cooking private events all over San Francisco and plotting the opening his own wine & beer shop.
