For the first time in Paladar history... it's been oh so long.... a double feature has been approved. Having sold out in less than 24 hours, we are adding another night.
Sylvan Mishima Brackett was born in Kyoto and grew up in a drafty Japanese housein the foothills of California's Sierra Nevada. His mother's home cooking and summer trips to visit his grandmother in Japan instilled in him a love of simple, real Japanese food. After graduating from Reed College, Sylvan cooked in restaurants in Portland, Oregon and the Cote d'Azur, France. He returned to California to work at Chez Panissein Berkeley, for six years as Alice Waters' assistant and then as the restaurant's first Creative Director, in charge of special dinners and events. But the food of his childhood called to him. He left for Japan to eat and cook and worked at a locally famoussoba restaurantin the countryside north of Tokyo. There, down-to-earth hospitality determined the service and the search for the most vibrant ingredients determined the menu. This informality and attention to the basic foodstuffslocal fish, local rice, organic vegetables, hand shaved katsuobushi, heritage breed meats all prepared simply, describePeko Peko.
Serendipitously introduced to Polly's Paladar last summer by Azriel LaMarca, Sylvan will be sharing his talents with us all this coming January 19th and 20th. As usual, there will be two seatings. One at 5pm and one at 8pm. Your confirmation email from Brown Paper Tickets will say which seating you are attending. There is no need to email Megan which seating you wish to be at anymore.
There is zero parking at the venue and once you arrive, be prepared to sign the new membership release form if you haven't already. Also, be prepared to have an amazing time at this private dinner. How lucky you are!
