2017-2018 Guest Chef Series Dinner 1
        Broadmoor Technical Center has partnered with the James Beard Foundation in continuing the "KC Originals/James Beard Chef Lecture Series." Each year we will be soliciting some of the nation's top chefs, inviting them to participate in our lecture/mentoring program.

       BrianPolcynis aChef, author, teacher, and food industry consultant from the Detroit area of Michigan.ChefPolcynhas worked in kitchens for 40 years. He has worked in and operated some of Michigans most prestigious restaurants and is the onlyChef/restaurant owner in Michigan to receive the prestigious Restaurant of the Year award five individual times. He is a member of the Butchers Guild, the American Culinary Federation (he has received three gold and one silver medal), was featured in the book Soul of theChef by Michael Ruhlman, and has been a culinary instructor at School Craft College for the past 20 years where he has taught classes on Charcuterie.
     
        ChefPolcynis considered to be an expert in the field of Charcuterie. He has co-authored two critically acclaimed books on Charcuterie with renowned food writer, Michael Ruhlman, entitled, Charcuterie: The Craft of Salting, Curing, Smoking (2006) and Salumi: The Craft of Italian Dry Curing (2012). In 2006ChefPolcyn and his first book, Charcuterie, were both nominated for a James Beard award in the categories of BestChefin the Midwest and Best Single Subject Cookbook.

     Today,Chefhas moved on from the restaurant industry to focus on teaching, consulting, and writing a third book with Michael Ruhlman on the subject of pates, terrines, and rillettes.

      He is the father of 5 lovely children, has been married to a beautiful woman for over 30 years, and is an avid rider of Harley-Davidson Motorcycles.
