Fermented Pairings Series Vol. 20: Farm Fresh Ferments Featuring Chef Chuy of The Good Seed Food Company
Volume 20 of the Fermented Pairings Series will feature four locally-sourced ferments, ranging from housemade sriracha to fermented garlic and pickled dragon fruit.
White Labs is teaming up with Executive Chef Chuy of The Good Seed Food Company, who will lend his culinary expertise to deliver one-of-a-kind, locally grown ferments. Joined by White Labs Education and Engagement Curator Erik Fowler, Chef Chuy will help lead a 90-minute classroom-style discussion that covers a farm-to-table approach of fermenting foods. These creations will be paired with five White Labs beers, some of which have been brewed with their very own fermented foods like coffee, chocolate and vanilla.
This class will be the FPS debut of Chef Chuys new project--The Good Seed Food Company. Its also one to not miss if you enjoy the funk, acidity and creativity of fermented foods!
Menu: 1) Fermented Cauliflower with Belgian Wit fermented with WLP400 Belgian Wit Ale Yeast
2) Pickled vs. Fermented Dragonfruit with Belgian Blond with WLP530 Abbey Ale Yeast
3) Fermented Soy Garlic with Black IPA with WLP013 London Ale Yeast
4) Green and Red Fermented Hot Sauces Brettanomyces IPA & Coffee Porter with WLP004 Irish Ale Yeast
