Whiskey and Cheese, Please: Spirits and Beer-Washed Cheese (and Beer!) in the Historic Crown Finish Caves
Beer and whiskey are a classic coupling only made better by one thing: cheese.
And theres no better place to explore the intersection of dairy and drinking than Crown Finish Caves. Here in Crown Heights, an 1850s brewerys subterranean tunnelswhere cool lagers once aged 30 feet beneath the streetshas been transformed into a cheese-aging wonderland.
The cheeses will be washed with wild and wonderful beers from Suarez Family Brewery, Interboro and KCBC, and then aged in the caves underground. Ripe and ready, the distinct cheeses will be paired with the same beers, as well as the beers distilled into whiskey by Brooklyns Arcane Distilling. Mix and match, which pair best? Moreover, how do you transform beer into whiskey? Or turn an old brewery into a cheese-aging facility?
To answer these questions, the distiller, brewers and Crown Finish Caves affineurs (translation: the folks that skillfully age the cheese) will be on hand to answer all questions. Your host is beer expert Joshua M. Bernstein, author of The Complete Beer Course and The Complete IPA.
