8th Annual Olive Festival
The 8th annual Olive Festival is held at the historic Highland Springs Ranch & Inn. The festival celebrates the harvesting of our olives (which are pressed to make our olive oil). Sample local wines, cheese plates and learn about the health benefits of olives and olive oil.
LIVE MUSIC Hailing from Costa Mesa, CA, The Reelers specialize in traditional Irish music as well as folk and pop favorites. Using an array of instruments including the fiddle, traditional Uillenann bagpipes, mandolin, guitar and bass.

ORGANIC MARKETPLACE The Organic Marketplace features organic products from 123 Farm. Come sample a variety of infused olive oils, marinated olives and even some lavender balsamic vinaigrette. 123 Farm offers culinary items like lavender infused honey, teas, syrups and dried spices from the farm. In addition, we have a line of beauty products made with our lavender essential oil and olive oil. The Organic Marketplace also features local artists and soap makers, organic farmers and non-profit organizations that share a similar vision on health and well-being.

WORKSHOPS Workshops are free and take place in the Hitching Post. Some workshops have limited spacing so please come before the scheduled time. Participants are asked to bring a water bottle, hat and comfortable shoes for workshops that take place outdoors. Highlights include a cooking class, rosemary essential oil distillation and lectures on olive oil.

OLIVE GROVES Although 123 Farm may be well-known for its organic lavender fields, the olive trees on-site are the oldest crop on the farm. Planted in 1854, the farm mainly grows Mission olives which is typically pressed to make olive oil. The farm also has picholine olives, also used for olive oil and Manzanilla olives which are used to make table olives. Every October, the staff at 123 Farm / Highland Springs Ranch & Inn, as well as volunteers from the local community help to harvest the olives to press into olive oil. The olives are harvested and then taken up to Paso Robles, California in a refrigerated truck. The olives are pressed within 24-hours of being picked. 123 Farm bottles and sells the estate extra virgin olive oil, as well as uses it as an ingredient in some of its beauty products. The farm has a biodynamic approach to farming, and at times, feeds the organic olive leaves to its flock of sheep as a natural supplement to improve immune function.
