Animalón is a popup by celebrated Tijuana chef Javier Plascencia and photographer Jaime Fritsch; inspired by what it feels like to cook out in the summer with Javier, to be behind the scenes with his team at the paella festival, to drink wine under the oak tree at Finca Altozano. Bread & Salt is an old Barrio Logan bread factory turned into an enchanting community art space.
Come with us on the first night of summer and eat exciting food made with incredible ingredients: experience traditional rabbit & quail paella, aguachile from local Baja waters, and a whole pastured Cook Ranch pig in the caja china. Drink beer from a special cask by San Diego's Fall Brewing, wine by Lomita Winery serviced by Baja Wine + Food, and more.
2017 marks 30 years cooking in professional kitchens for Javier as well as the release of his book, Soul of Baja. Soul of Baja tells an intimate story of food from Tijuana to Todos Santos as seen through the lens of the iconic dishes Javier has created.
