Tasting Sustainability: How cheese allows us to taste biodiversity at every level, from macro to micro
Join Bronwen and Francis Percival, in partnership with Crown Finish Caves and Slow Food, for a talk on the importance and preservation of biodiversity in our modern food system, with a focus on its affects in the dairy and cheesemaking industry. The lecture will cover the relationship between cheese and environment, beginning with the self-sustaining dairy farms at the advent of cheesemaking to the industrial methods of present day. Bronwen and Francis will talk in depth about the precipitous drop in the market value of agricultural produce caused by the intensification of farming, causing small farmers to adopt new conventions.

Bronwen and Francis Pervical are the authors of Reinventing the Wheel: Milk, Microbes, and the Fight for Real Cheese, forthcoming from the University of California Press in September 2017, and are cofounders and hosts of the London Gastronomy Seminars. Bronwen is the cheese buyer for Neal's Yard Dairy in London and served on the editorial board of the Oxford Companion to Cheese. Francis is an award-winning writer on food and wine.

Crown Finish Caves is an affinage facility founded in 2014 and is a licensed NYS Dairy Plant in Crown Heights, Brooklyn. The aging facility is located in lagering tunnels in the former Nassau Brewery building dating back to the 1850s. Crown Finish Caves works primarily with regional cheese producers to create diverse, sustainable products which come to maturation in the facility, after which they are distributed across the country.

Slow Food is a global movement, born in Italy to counteract the rise of Fast Food. It envisions a world in which all people can access and enjoy food that is good for them, good for those who grow it and good for the planet. Biodiversity is a central theme of their work, and they actively support raw milk cheese.
