Porks & Knives
A unique experience is taking place on Martha's Vineyard in November. This event, called Porks and Knives is an opportunity for culinary professional to come together and learn about traditions of pigs.
With the help and guidance of Francois Vecchio, master salumi maker, butcher and authority on all things four legged, we have a unique chance to not only learn the classic techniques of how to cure pork in traditional manners, but also to experience and participate in the slaughter.
We will work side by side with Mr. Vecchio and also meet farmers who raise animals in humane and sustainable practices.
This will provide you with 1 side of locally raised pork, 3 meals a day during the week, transportation to and from the hotel to the kitchen, an apron, a t-shirt and a butcher and boning knife. While you are here on the island you'll also be taken to different farms for dinners as well as see local operations of farmers raising sheep, goats, geese, chickens, dairy cows and more.
